Chef Esdras Ochoa promotes Mexican flavours at IFT

IFT hosted on 8 June a showcase of Mexican cuisine with Chef Esdras Ochoa. The event was held in partnership with the Consulate General of Mexico in Hong Kong and Macao, and took place at IFT’s Demonstration Kitchen.

Chef Ochoa introduced the workshop participants to several Mexican signature dishes. He also provided them with basic knowledge of Mexican ingredients and discussed some key issues related to the process of making meals based on this type of cuisine.

Chef Ochoa is the founder and Executive Chef of “Mexicali Taco & Co.”, a popular ‘taqueria’ – a restaurant specialising in tacos and other Mexican food – in Los Angeles, California, in the United States. He is also the Executive Chef and a partner at “Salazar”, an eatery serving tacos, beer and cocktails, also in Los Angeles.

The Mexican chef is additionally a partner of “11 Westside” in Hong Kong. There, he is experimenting with his favourite L.A. dishes, using Asian ingredients and cooking techniques.

Chef Ochoa’s 2-hour demonstration workshop at IFT is part of the Institute’s efforts to assist in increasing student and industry awareness of different types of gastronomy. The Institute has met that objective also by hosting food promotions with chefs from different parts of the world at its Educational Restaurant.

IFT has been particularly active in promoting culinary flavours from Latin America. The Institute has in recent years held chef demonstrations and food promotions celebrating the national culinary traditions of several Latin American countries including Mexico, Peru and Argentina.
