IFT sets world record for longest biscuit roll

A team of IFT staff and students have succeeded in baking the longest biscuit roll the world has yet seen. Their confection, 114 centimetres long, set a new Guinness World Record – the first ever for this type of pastry.

The record attempt took place on 16 January and was arranged by the Macau International Carnival Association and the Macau Creative Industry Association. IFT, the Macao Government Tourism Office, the Macao Foundation and the Macau Tower also supported the effort.

One of the IFT students involved in the project was Serenah Lam. “I am very honoured to have participated in the creation of the biscuit roll,” she says. “This kind of opportunity is very rare.”

Serenah is in Year 4 of the Bachelor of Arts in Culinary Arts Management programme. She has a sweet tooth and a taste for Macanese cuisine. “I want to pass on the flavours of this traditional type of cuisine to future generations,” she says. Her hope is career opportunities in the food and beverage business will open up for her now that Macao is a UNESCO Creative City in the field of gastronomy.

Macau Creative Industry Association Chairman Mr. Kevin Ho says: “Without the IFT team, there would be no record to celebrate.”

IFT President Dr. Fanny Vong says the Institute has increased its efforts to supply the food and beverage industry in Macao with better-qualified workers. IFT introduced its Bachelor of Arts in Culinary Arts Management programme in 2011 and has been offering a wider range of courses for workers in the industry. In academic year 2016/2017 the Institute trained about 3,000 people in various aspects of the food and beverage business.

Dr. Vong says an important element of the education IFT undergraduates receive is the chance they are given to compete in various contests and take part in extra-curricular activities so they can broaden their horizons. “I am very glad our students and staff could vie for a place in the Guinness World Records,” she says.
