IFTM – Teaching and learning through Asian Cuisine demonstration

In 2017, Macao was designated as a UNESCO Creative City of Gastronomy. Macanese food contributes to Macao’s intangible cultural heritage and its connection to Asian cuisine.

IFTM Culinary Management covers the Asian cuisine curriculum which aids students in developing a deeper grasp of the interrelationships between Asian cuisine and Macanese food. This course helps to deepen students’ understanding of the procedures, abilities, and expertise required in a professional kitchen. We also invite professional chefs to share their expertise and knowledge; and introduce the students to the authentic ingredients, cooking techniques, and flavor profiles required to create flawlessly balanced.

In subsequent Asian Cuisine lessons, we have delved deeper into Japanese cuisine, Chaozhou cuisine, Cantonese cuisine, New fusion Asian cuisine, and Macanese cuisine. The demonstration format is a master and practical cooking session for students to enhance their creativity and palate while learning something new. The chefs will prepare dishes from their respective areas of expertise; students will observe and then be guided by both chef and lecturer in charge to make those demo dishes.
