Joining the Star Chef’s Talk Series at City of Dreams Macao by Executive Chef of Three Michelin-starred Chinese Restaurant Jade Dragon

On 18 November, Melco Resorts & Entertainment Limited has invited IFTM’s Year-4 Culinary Arts Management Bachelor Degree Programme (CAM) students, our faculty members, Dr. Christy Ng (Coordinator of CAM), Mr. Jerome Keong (Lecturer), and Mr. Benjamin Chen (Lecturer) to attend the Star Chef’s Talk Series at City of Dreams Macao. The talk aimed to exchange knowledge and skills with hope to inspire the future generation in joining the dynamic culinary industry.

Ms. Joyce Wong Iok In (Director of Training) and Mr. Lawrence Li Ka Ho (Executive Director of Human Resources) arranged the group to join a sharing session with Star Chef Kelvin Au Yeung Man Yin, the Executive Chef of Three Michelin-starred Chinese restaurant Jade Dragon which is 1 of 8 Three Michelin-starred Chinese restaurants worldwide.

Star Chef Kelvin told the group that Macao, a member city of the UNESCO Creative Cities Network (UCCN) in gastronomy, faces fierce competition among restaurants to attract customers who are always searching for good food, good value, and unforgettable experiences. As a Three Michelin-starred Chinese restaurant, the Jade Dragon insists on customizing the dishes based on dietary taboos and providing unique customer experiences. Therefore, it is important to keep learning and to improve culinary skills to surprise customers with unique cooking and presentation styles while keeping the traditional culinary culture, skills, and tastes.

“There are more solutions than difficulties. It will help to keep a positive work attitude and team spirit to learn and share ideas among the team,” said Chef Kelvin Au Yeung Man Yin.

Chef Calvin Soh, the Vice President of F&B Culinary, who also joined the sharing session, had expressed his concern about fewer young chefs joining the industry. He told the group that being a chef is a professional career. Unlike before, the kitchen’s working environment has improved dramatically, and it will continue to improve. He encourages the students to join this dynamic industry as it offers continuous training opportunities to improve themselves and their culinary skills.

After the talk, Chef Kelvin has invited the group to a unique and memorable, savory tasting experience at Jade Dragon. In this talk, the students have gained more culinary knowledge and skills which has further inspired them to join the professional chef career.
