This course aims to provide students with a background in the basics of nutrition focusing on the functions of different nutrients on human health. As the future culinary professionals, students learn about dietary recommendations and nutrition labelling in order to create a dish that is balanced, moderate in rich ingredients, well prepared, and great tasting. This course also aims at giving students an overview of food safety regulations and standards in the F&B industry to ensure safe food production. The principles and practices of HACCP system and food sanitation are also included
