The course addresses the fundamentals of how the building in which the hotel is housed functions, and an appreciation for the design aspect of the property and the furnishing, fixtures and equipment (FF&E) vis-à-vis the profitable running of a 24-hour operation, and customer service and product satisfaction. Students are introduced to the applications and control of physical, human and financial resources in the operation and the evaluation of suitable accommodation products, services and systems to optimise productivity, to maintain quality standards and to satisfy the needs of the consumer. The relationship between function and form, and basic engineering concepts are introduced.
