This course develops the student's knowledge and understanding of the conception and management of small and medium enterprises (SME's). It will also allow the student to apply management concepts and techniques to the running of small and medium enterprises. A particular emphasis will be placed in students undertaking appropriate preparatory research prior to starting up a business and understanding the risk and creativity involved in entrepreneurship.

The intention is to prepare students to establish their own business in the culinary field. Emphasis is placed on adapting the business plan to the realistic needs of a small business owner.
